Nicknamed Food fit for a King, the San Miniato White Truffle has earned itself this name and is celebrated every year with a Market Fair in the month of November.
The Sanminiatesi Hills are an ideal environment in which the Tuber Magnatum Pico can grow: it is here that symbiont vegetation and trees develop on a marly and marly-sandy ground in a territory with an ideal climate and an ecosystem that is still uncontaminated.
The White Truffle is the finest of the tubers and is harvested between September and December. The importance of this resource for the territory is demonstrated by the fact that the Municipal Authority, in its agricultural area plan, has reserved over one third of the municipal area to truffle production, safeguarding its preservation.
