Founded in April 2010, in just a few short years PS has become a major point of reference for Tuscan gastronomic tradition. The name comes from chef Stefano Pinciaroli’s initials. Pinciaroli, after various professional experiences in Italy and abroad, decided to open his restaurant in the beautiful village of Cerreto Guidi, his hometown.
Stefano’s aim—and that of the entire PS staff—is to bring an unforgettable, unique culinary experience to his guests.
Stefano Pinciaroli’s cooking is the perfecrt mix of tradition and innovation. It strikes the right balance, basing dishes off traditional tastes while implementing new cooking techniques. The entire process of creating these dishes is managed particularly through small details, starting with an attentive selection of raw materials and ingredients, and ending with a beautiful final presentation.
The wine cellar, managed by sommelier and official wine taster Lorenzo Caponi, consists of numerous Italian and foreign labels. Lorenzo, a member of AIS and the main manager of the dining room, is constantly keeping things updated in order to be able to offer guests a unique and original selection of the best wines.
