The ‘Zero Kilometer’ or ‘Short Chain’ philosophies come from the desire to use the following types of ingredients in our own recipes: milk, flour, eggs, meats, and vegetables—all produced and modified within our regional territory.
These foods, then, don’t travel in refrigerated trucks for weeks, undergoing various storage stages before ever reaching our kitchen. Rather, these are freshly prepared products that still have the scents and tastes that are true to their nature.
By chance, you might even bump into one of the suppliers while having dinner in our restaurant. Then he might be able to weave a bit of the story together for you, almost as if he were just one of your neighbors.
All this reflects how we strive to become more and more knowledgeable of our own diets and the origins of our food. We also aim to become less passive consumers of highly industrial and processed foods.
In terms of quality, this characteristic of small-scale production is not a defect, but rather
a quality that only increases the value of what we eat. We’re keenly aware of this, being small-scale producers ourselves.
