Zuccherino is a round, doughnut shaped biscuit that’s fragrant and yellow-coloured. Its speckled surface is dusted with icing sugar.

6. Production process:
A well is made in flour and beaten eggs, sugar, lemon, sourdough starter and a bit of milk are poured in. Everything is mixed to get a smooth dough. The dough is then divided into pieces and shaped into doughnuts that are placed on a greased and floured tray. The biscuits are dusted with icing sugar and baked for half an hour at 180°C.

The unique character of these biscuits comes from their shape and the ingredients used, which were traditional in the farming culture.

9. Production
Zuccherini di Maremma are spread throughout the Grosseto province. Production is estimated to be 150 tonnes a year, although no increase has been recorded as the product is rarely requested. Sales are made entirely in the area and mainly in local stores.
