3. Short description:
Zuccherini are sweet, dry biscuits shaped like doughnuts. They are white-coloured because they’re dipped in melted sugar after baking. The smell like aniseed. They are made all year round, both at an industrial level by local bakeries and an artisanal one (by hand) by members of a local organisation.

6. Production process:
According to the traditional recipe, the dough is prepared with white flour, fresh eggs, sugar, butter, lemon peel, milk and leavening agents. It’s shaped into small doughnuts and baked for half an hour. Meanwhile, sugar is melted with aniseed liquor and some water in a pot or “paiolo” (that’s why they’re called “zuccherini al paiolo”). The baked biscuits are dipped in the melted sugar and left to cool.

Zuccherini were once very popular in the municipalities of the Firenzuola territory. In fact, they were always eaten at the end of lunch, especially on special occasions and festivals, as well as at wedding receptions. Handmade preparation gives these biscuits a unique flavour, which is lost during the industrial process. The recipe for zuccherini was handed down the generations orally.

9. Production:
The artisan product is only sold during festivals by the Bruscoli cultural and social sports club as part of a fundraiser. The industrial product (50 tonnes a year) is made by two local bakeries, which sell it in store and to wholesalers. The cultural events that celebrate zuccherini are the “Rassegna enogastronomica mugellana” in Scarperia and the “Dal bosco e dalla pietra” festival, which is held in Firenzuola every year.
