3. Short product description:
Torta co’ bischeri is a round and dark coloured shortcrust pastry sweet. It’s similar to a chocolate tart and it tastes of pine nuts, chocolate and candied fruit.

Province of Pisa (San Piero a Grado, Vecchiano, Nodica, Pontasserchio, Marina di Pisa) and Lucca (Torre del Lago).

6. Production process:
s For the shortcrust pastry: mix “00” wheat flour with butter, icing sugar, plain sugar, liquor and leavening agents.
s For the filling: numerous ingredients are mixed together including rice, melted chocolate and cocoa powder, raisins, candied fruit, pine nuts, liquor, egg, sugar and vanilla. The dough is rolled out with a rolling pin, placed in a baking tray and covered with the filling. In some variations, another sheet of dough is laid on top. It’s baked in the oven.

Torta co’ bischeri is typically prepared for the Feast of the Ascension. The pine nuts used in the dough come from the Migliarino San Rossore park.

9. Production:
Torta co’ bischeri is made by all the bakeries and pastry shops in Pontasserchio, San Piero a Grado, Nodica, Marina di Pisa and Vecchiano, and also by the families of the area, who produce it for personal consumption. The total production is around 60 tonnes a year. During the Pontasserchio agricultural fair, all the stalls offer torta co’ bischeri.
