Torsetto is a white-coloured sweet with an aromatic aroma and orange flavour. Finished, it looks like a diamond topped by a small “bubble” that rises during baking (to get this, the individual pieces must be worked very quickly during preparation).

6. Production process:
Sugar is cooked with water until it can be stretched like a wire. It’s quickly mixed with flour and the remaining ingredients (cloves and orange) and rolled out into a ½cm-thin sheet. The pastry is quickly cut into little diamonds, placed in a tray and baked at 180°C. During baking, the lower part of the pastry forms a bubble. Baking time is about 20 minutes.

This sweet owes its unique character to the shape it assumes after baking, which is also its namesake. “Torsetto” means torso in Italian.
9. Production:
There are four bakeries in Pitigliano that produce Torsetto con la bolla, even if only one is known for making products according to traditional recipes. They are only made during the Easter period for a total production quantity of 30kg. The product is destined exclusively for direct sale.
