Nettare di Capraia is a wildflower honey with liquid consistency and slightly opalescent, amber colour. It is aromatic with a slightly floral aroma. Its flavour is slightly bitter and has notes of thistles. It’s packaged in 40g to 250g glass jars.

6. Production process:
The honey is extracted from the honeycombs with a centrifuge. It’s then filtered through two metal filters and a bag filter directly to into the settling tank, where it is left to decant until the surface forms a light foam (at least 20-25 days). It’s placed into glass jars without undergoing pasteurisation or other heat treatment.

Capraia Island has always produced this honey. In the past, it was consumed by a small number of families. The establishment of a penal agricultural colony on the island in 1873 increased production and honey became a valuable dietary supplement for all local families. From the rustic beehives of the past, traditional beehives are now used to maintain the honey’s traditional aromas and properties.
The majority of production is sold in the area directly by producers or through local stores. Only a small part is sold in the rest of Tuscany.
