3. Short product description:
Migliarino-San Rossore Park honey has a light transparent amber colour and liquid consistency. It smells and tastes like the essential plant oils of the Mediterranean scrublands from which it’s produced: cistus, tamarisk, strawberry, pittosporum and helichrysum. It’s produced from May to August. In the colder seasons, it tends to crystallise.

8. Notes on traditionalism, homogeneity of spread and persistence of production rules over time:
This type of honey is made in the Versilla area, inside the Migliarino-San Rossore Park. Its characteristics are tied to the geographical area in which it is produced and particularly to the local flora of the Mediterranean scrublands: cistus, tamarisk, strawberry, pittosporum and helichrysum, which are responsible for the honey’s unique colour and flavour. Helichrysum and cistus are difficult to find in Italy. Helichrysum produces essential oils that dirty the bees during pollination, giving the honey its unique aroma. The unique production area, as well as the types of flora found within it, is the result of both a mild climate and the complete isolation of this coastal strip as the pine forests act as an impassable barrier for insects.
This type of honey is only produced by one company located in the Migliarino-San Rossore Park, for a total quantity of around 7 tonnes a year. Production is sold direct or at local markets. Only a small amount is sold in the rest of Tuscany
