Femminelle di Burano are lagoon crabs used to prepare some traditional local dishes. They belong to the genus of the Portunidae, especially Carcinus (mediterraneus), are heart-shaped, olive green, and very common on all sandy bottoms up to 20 meters deep and on sandy beaches.

The traditional character of this product is tied to its local origins and use in a number of traditional recipes (femminelle caviar, minestra, soup and risotto di femminelle).

9. Production:
Femminelle, together with other fish products from the Orbetello Lagoon, is made by one cooperative. They are fished from November to January for a quantity of about 10 tonnes a year. They are sold direct and used by restaurateurs. There is no real market for them as they are not prized products. They are available in the cooperative’s shop. Fish products from the Orbetello Lagoon have starred in numerous initiatives including Fieragricola, Salone del Gusto in Torino and Mia in Rimini.
