To promote the meat of the Chianina breed, its link with the territory of origin and provide the consumer with the knowledge of how to use it in the kitchen. With these objectives, the Consortium for the protection of the White beef of the Central Apennines IGP and the association ‘Amici della Chianina’ (friends of Chianina) have organised ‘Chianina a tavola in tour’. A special edition of the project ‘The Valley of the White Giant’ founded in 2005. It is an itinerant initiative with four dinner-meetings scheduled from December 2021 to March 2022 and open to sector operators, breeders, gastronauts and those who love Chianina meat branded White Beef of the Central Apennine IGP.  The meetings will take place in four Tuscan restaurants in Valdichiana, between the provinces of Siena and Arezzo, to promote the area of origin of the Chianina breed. They will feature four chefs of the Regional Union of Tuscan Chefs – Katia Maccari, Emiliano Rossi, Walter Redaelli and Lorenzo Pisini – who, each evening, will work side by side to prepare dishes based on Chianina meat. 

 

The first appointment is scheduled for Friday, December 10, at ‘I Salotti del Patriarca’ in Chiusi, in the province of Siena, while on Friday, January 14, ‘Chianina a tavola in tour’ will visit the Osteria’ Il Teatro’ in Cortona, in the province of Arezzo. On Friday, February 4, the event will move to Bettolle, in the municipality of Sinalunga, in the province of Siena, as guests of the ‘Walter Redaelli Restaurant’, while the last date is set for Friday, March 4 at the ‘Logge Vasari’ restaurant in Arezzo. Each event will be hosted by Andrea Petrini, director of the Consortium for the protection of the White Beef of the Central Apennines IGP, with each meal being paired with excellent locally produced wine. The White Beef of the Central Apennines obtained the IGP certification in 1998, the highest quality mark for fresh beef approved by the European Union for Italy, aimed at qualifying the meat produced by the typical bovine breeds of the territories of the Central Apennines: Chianina, Marchigiana and Romagnola. The cattle must be born and reared in the typical farm area which is subject to inspections verifying compliance with the production specifications. The meat certified with the brand “White Beef of the Central Apennines IGP” can only be sold at authorised and controlled points of sale. The Association “Amici della Chianina” (friends of Chianina) is based in Bettolle, in the municipality of Sinalunga, in the province of Siena, and was founded in 2005 with the aim of promoting the Chianina breed, its link with the area of origin and its gastronomic use. 

 

“Chianina a tavola in tour” is organised under the patronage of the Municipality of Sinalunga, in collaboration with the Regional Union of Tuscan Chefs, the Siena Chefs Association, the Arezzo Chefs Association, the Valdichiana delegation of FISAR, the Italian Federation of Sommelier Hoteliers and Restaurateurs and the Arezzo delegation of AIS, the Italian Association of Tuscan Sommeliers.
